Spalding hotel to open revamped restaurant

A revamped restaurant at a popular historic hotel will be opening its doors next month.

Owner Jeremy Powell is looking forward to reopening the restaurant at The Red Lion, in Spalding’s Market Place, on Sunday, October 3.

Mr Powell, who bought the hotel earlier this year, has refurbished the eatery, which will be serving traditional pub food.

However, like many hospitality businesses in the area, Mr Powell is struggling to find staff and is on the lookout for new recruits to join his team.

Mr Powell, who will be having his head shaved during the hotel’s Macmillan’s World Biggest Coffee Morning tomorrow (Friday), said: “I am very excited to be opening the restaurant.

“It has been redecorated with new furniture, flooring and kitchen.

“We have done a lot of work in the kitchen but in this labour market we are short at the moment.

“We will be able to contribute to Spalding’s varied culinary scene as we will be providing freshly served food.

“The feedback we have been getting from customers is that they are looking forward to going out for a treat to have quality traditional pub food.”

Mr Powell added that the pub’s menu will be evolving under new chef Ben Howling, who used to work at PE11, and said that there will be specials on offer too.

He has enjoyed a positive response from customers since purchasing the hotel from long standing owner Nigel Wilkins in April.

Mr Powell said: “It has been very touching and impressive to hear the local nostalgia for the hotel.

“We have had positive support from customers and the tables and chairs at the front have been a big hit.”

The coffee morning will run from 10am tomorrow (Friday).
