Get ready to sample the Moulton Lava Sausage as Moulton Chapel Butchers reopens on Friday




A new butcher has taken over a well-known shop and is hoping the grand opening will go off with a bang-er.

Mark and Katie Elsey have taken over the reins of Moulton Chapel Butchers and are gearing up for the grand opening tomorrow (Friday).

Mark, who had more than 20 years of experience in the food industry, has created the spicy Moulton Lava Sausage - which customers will be able to sample if they pop along tomorrow.

Along with the traditional butchery, the couple are hoping to operate a farm shop and a delivery service.

Katie said: “Everyone has been really positive and a lot of villagers have said it was good to have the shop back open again.

“We are hoping to run it as more of a farm shop.

“Our lamb is from Weston Hills and we are trying to source everything locally.”

The shop has been closed for a short time after the previous tenant had given up the lease.

This opportunity came at the right time for Mark, who had worked at the now-closed George Adams shop in the Crescent, Spalding.

Katie said: “This is something that Mark has wanted to do for a long while and the shop is so beautiful and we thought we would give it a go.

“We are trying to keep it as a nice traditional butcher which is family run.

“Mark has created the Moulton Lava Sausage and his own recipe for the Lincolnshire Sausage.”

And the popular Brian Frisby sausage will also be on sale too - after the well-known village butcher has shared the recipe.

Katie said she was looking forward to welcoming customers to the shop on Friday during the grand opening.

Katie said: “We are looking forward to chatting to people.”
